"Making The Most From Cranberries"

Previously I had provided the health benefits of cranberries, but now I would like to give on some tips and a wonderful healthy recipe that will allow you to get the most nutrition and health benefits from your cranberries. Raw cranberries contain, considerably more healing compounds that cooked so I have provided an easy and delicious raw cranberry relish recipe.  I also have provided an easy fresh cranberry sauce recipe. I suggest organic cranberries because I believe it is always best to use organic to avoid pesticide and many other toxic chemicals that commercial foods can be contaminated with.

 

Tips About Cranberries:

  • Whole cranberries normally come in 1 pound bags that are long keepers; they’ll last a month or more when kept in the refrigerator and over a year in the freezer.
  • Don’t wash them prior to storage because it will cause them to spoil.

 

cranberry sauceFresh Cranberry Sauce:

  • Use about 1 pound of organic cranberries (about 4 cups)
  • 2 cups of boiling water
  • Organic sugar or stevia to desired taste

Directions:

1.  Put the fresh cranberries in a medium saucepan and cover with the boiling water.

2.  Return to a boil, cover the pan, and continue cooking for about 4 minutes, or until the skins burst.

3.  Stir in sugar or stevia to your personal taste. The berries are very tart.

4.  Return the pan to the heat and bring to a boil again and once they are boiling immediately remove from the heat. You can serve immediately or let cool. ENJOY!

cranberry relish

Nutritious Cranberry Relish

  • 1 pound of organic cranberries
  • 2 medium-sized organic apple
  • 2 thinned-skinned organic navel orange
  • 1/2 cup organic sugar or 1/4 raw honey (to your personal taste)
  • 1/8 teaspoon organic ground ginger (optional)

Directions:

1. Place cranberries in a colander and rinse well with cold water.   Discard any soft cranberries.

2. Core the apple, but do not peel the skin, and cut into chunks.

3. Cut the oranges including the rind into chunks.

4. Place in a food processor or heavy-duty blender and process until finely chopped, scraping the down the bowl once or twice.

5. Transfer to a medium size bowl and add the sugar or honey and ginger. Stir until blended. Let stand for at least 15 minutes before serving and then stir again before serving.

You can make this relish and store refrigerated in a covered glass dish for up to 2 days.

Cranberries are a wonderful healthy fruit that can make tasty dishes for the holidays, but don’t deprive your family of the delicious and naturally nutritious value of them just on special occasions.  Let them enjoy them throughout the year so that they can reap the many health benefits and natural remedy that Nature has provided. There are many flavorful recipes that you can make and ways to add them to your family’s regular diet.
